cipolle Stuffed onion recipe from Genoa: delicious and easy to prepare.

Ingredients: 6 large onions; 1 veal steak; 3 eggs; 50 g Parmesan cheese; 1 clove garlic; breadcrumbs; 50 g Parma Ham; extra virgin oil; butter; marjoram; a pinch of salt

Method: 1. Prepare the onions by removing their outer papery skins. 2. Boil them in salted water for 10 minutes. 3. Cut in half crosswise, scoop out a large hollow centre and leave the onions to cool on a clean piece of cloth. 4. Chop the reserved centres of the onions, drain and then place in a bowl. 5 Soak the breadcrumbs in milk for a few minutes, fry the veal steak in a bit of butter, add the ham and eggs and chop all ingredients together. Pour the mixture into the bowl and stir. 6. Fill the onion shells, place in an oiled baking dish, add a sprinkle of breadcrumbs and bake at 200° c until golden.
