Italian recipes: focaccia stuffed with mashed potatoes

focacce ripiene di patate e cipolle.Another easy Italian recipe to prepare. Easy and rather cheap! Here are the ingredients:

900 g potatoes; 220 g flour; 100 g onions; 1 tablespoon extra virgin oil; vegetable oil; salt and pepper

Preparation: sift the flour, add water, salt and extra virgin oil and make the dough. Wrap up in a plastic film and let it rest in fridge for 30 minutes. Cook and mash the potatoes. Add the half boiled onions (chop them finely). At this point roll out the dough, cut into rounds, fill with the smashed potatoes and enclose the filling by lifting over the other side of the dough. Press the edges firmly together to seal and then fry. Delicious!
